3. In the washed process, we remove the outer skin of the cherries using a pulping machine. The beans, still covered in a mucilage layer, are then placed in fermentation tanks for 24 to 72 hours. During this time, natural enzymes break down the mucilage, which enhances the development of the beans' unique flavors.
5. Once the beans are fully dried, we hull them to remove the dried cherry or parchment layer. We then polish the beans to remove any remaining impurities, preparing them for grading, packaging, and export.
